Our Pure Organic Specialty Coffee: From Cherry to Cup Our specialty coffee is a true expression of care, quality, and respect for nature. Carefully grown under organic farming practices, each cherry is hand-selected at the peak of ripeness, ensuring only the finest beans make their way into your cup. After harvesting, the coffee undergoes a meticulous washed process that highlights its clean, bright, and elegant profile. The ripe cherries are first de-pulped to remove the outer fruit flesh. The beans, still protected by their parchment layer, are then thoroughly washed in clean, fresh water. This vital step removes any remaining mucilage and impurities, allowing the intrinsic flavors of the bean to shine through without interference. Once washed, the parchment coffee is slowly and evenly dried by mechanical means under controlled conditions. This gentle drying preserves the bean’s structure and develops its complex character while maintaining the highest standards of quality and consistency. The result of this artisanal journey is a beautifully balanced coffee. Finally, our selected beans are roasted in small batches using traditional artisanal methods. This careful, hands-on roasting brings out their full potential: rich notes of chocolate, a smooth medium body, vibrant yet balanced acidity, and a clean, lingering finish.
