Our Natural Sunset: A Sun-Kissed Journey Our Natural Sunset coffee is a celebration of patience, tradition, and the generous power of nature. After careful harvesting at optimal ripeness, the whole coffee cherries, still wrapped in their sweet, vibrant fruit, are taken straight to the drying beds on our farm. There, under the warm tropical sun and open sky, they begin their slow, deliberate transformation. For approximately 15 days, the cherries rest gently in the sun, turned regularly by hand to ensure even drying. Like fine raisins slowly concentrating their essence, the beans inside absorb the natural sugars and vibrant fruit notes from the surrounding pulp. This extended contact with the cherry flesh creates a remarkably rich and complex flavor profile, deep caramel sweetness, pronounced fruity brightness, and a full, syrupy body that lingers beautifully on the palate. Unlike washed coffees, our Natural Sunset process allows the bean to develop a bolder, more indulgent character with wine-like acidity and intense aromatic layers. The result is a naturally sweet, expressive cup that feels like a warm sunset in every sip: bold yet smooth, fruity yet earthy, with a satisfying heaviness and lingering aftertaste.
